HEALTHY VEGAN Instant Pot "Un-Fried" Rice! (Oil-free, WFPB & Easy!)

RECIPE BELOW! Mexican-inspired veggie rice cooked in the instant pot WITHOUT oil! Today I'm making a few modifications to make this easy recipe oil-free and healthy, but still very yummy! Vegan, gluten-free, oil-free and delicious! Instant Pot (I LOVE my instant pot!) https://amzn.to/2N6dw42 Better than Bouillon (I love this variety pack!) https://amzn.to/31omWjM 🌱 Subscribe:    / letseatplants   IG:   / lets.eat.plants   FB:   / lets-eat-plants-108029567397987   🔺 My Version of the Recipe (with oil-free modifications!) 1 onions, chopped 1 Tablespoon (about 4 cloves) garlic, chopped 1 large carrot (or 2 small) chopped 2 tomatoes, pureed (or sub 1/4 cup tomato sauce, see original recipe below) 1 1/2 cups rice 1 1/4 cups water (use 1 1/2 cups water instead, if you use tomato sauce) 1/2 Tablespoon Better than Bouillon paste (I used vegan chicken flavor) or sub veggie broth/water 1/3 cup frozen corn 1/4 cup chopped coriander 1/4 cup water (for sautéing) Press sauté on the Instant Pot and wait a few mins for it to heat up. Add onion & garlic + 1/4 cup water. Once cooked down a bit, add tomato puree, then add carrots. Press cancel on IP and add in rice. Mix everything thoroughly. Add 1 1/4 cups water & broth paste. Seal the lid carefully, and make sure the knob is pointing to "sealing". Press rice on IP (12 mins, low pressure) and allow it to run it's full cook cycle. When finished, let the pressure come down naturally for around 10 mins. Carefully release any remaining pressure and open the IP. Stir in frozen corn & coriander.
