Mango pudding is a simple and delectable cold dessert that is popular in many Asian countries. It is a soft, luscious and a fruity dessert that is incredibly easy to make with just 5 ingredients. All you need is some fresh mangoes, cream , milk, sugar and gelatine or agar agar to make this recipe. It is a perfect make ahead treat to feed the crowd. Ingredients 1 cup mango puree 1/4 cup sugar 1/2 tsp vanilla extract (optional) 1/2 cup fresh cream 1/4 cup milk 2 tsp gelatine or agar agar 1/4 hot water (to dissolve the gelatine) Notes: 1. Mango pudding should be smooth, creamy, and velvety, free of fibers. Blend the mangoes well in a mixer and if your mangoes still are stringy or fibrous, strain the puree through a sieve or fine mesh strainer to ensure that mango pudding has a smooth silky texture 2. Adjust sugar according to the sweetness of your mangoes 3. Dissolve gelatine or agar agar in hot water very well before adding it to the pudding. There should be no granules present. 4. Cook the pudding on low flame throughout the recipe 5. Refrigerate the pudding for a minimum of 3 to 4 hours 6. You can make this in advance and keep it in the fridge for upto 2 days
