Here’s what we got: Mustard leaves (Sarson) Spinach leaves (Palak) Bhatua leaves (Chenopodium or goosefoot greens) After searching for mustard leaves for two years in Bangalore, I finally found them and couldn’t wait to share this recipe with you all! Preparation Steps Cleaning the Greens: First, pluck the leaves from the stalks. Wash the leaves thoroughly in 3-4 rounds of water to remove all the sand and dirt. Clean greens are essential for a smooth and flavorful dish. Chopping the Greens: After washing, chop the mustard, spinach, and bhatua finely using a chopper or knife. Chopping right after washing helps retain the vitamins and juice of the leaves. Cooking the Mustard Greens Add all the chopped greens to a pot with 1 cup of water. Cook on medium flame for about 10 minutes. The mustard leaves are slightly tough, while spinach cooks quickly, so ensure everything is boiled evenly. Once boiled, mash the greens. If you don’t have a churner, you can use a spoon or a blender. Seasoning the Saag Heat 1 tablespoon of ghee in a pan. Adjust the water as needed for the desired consistency. Final Touches Let the saag simmer for 10-15 minutes on low-medium flame until it thickens and starts leaving the sides of the pot. Add a small piece of butter and garnish with freshly chopped coriander leaves for an extra burst of flavor.
