I am sharing our favorite (one of them) Mexican dinners I make from time to time. These street tacos are mouth watering, bursting with flavor! The Spanish rice is hands down the best homemade rice I have made to date. The toreados - I'll just say this. It blows the restaurant ones out of the water. The majority of my husbands crew that works for him are straight from Mexico and they would totally agree with this statement (and have) Try this meal sometime, it is bursting with flavor and really is not a difficult meal to make. You can get the flank steaks MUCH cheaper at walmart but this was a last minute meal and walmart is over an hour away from us. Safeway is only about 20 minutes from us, so the cost of fuel and time vs paying a higher price tag. If you give this a try PLEASE leave me a comment and let me know your thoughts. RECIPES: Spanish Rice (in the video I doubled the amounts) -2 cups long grain rice, uncooked (I use jasmine rice) -1/8 cup vegetable oil -8oz tomato sauce -1 tsp salt (of choice) -1 tsp minced garlic -4 cups of chicken broth STREET TACOS 2 pounds of steak - flank or skirt steak (I use flank steak) 1/4 cup oil of choice (i use olive oil) keep in mind the oils smoke point 1 tbsp white wine vinegar 3/4 tsp oregano 1/2 tsp ground cumin 1 1/2 tsp chili powder 1/2 tbsp sea salt 1/2 tbsp black pepper 1/2 tsp onion powder 2 garlic cloves, minced 1 orange (juice it) 1 lime (juice it) 1 large white onion (sliced) 1 bunch of cilantro (we cook ours with the steak and eat it, so I use WAY more than needed) Mix everything altogether in a large bowl and cover. Place in the fridge from anywhere to 2 hours to 24 hours. INSTANT POT HOT COCOA Makes roughly 10 cups 6 cups milk of choice ( I use 2 percent) 2 cups semi sweet chocolate chips (you can use milk or dark chocolate) 1 can sweetened condensed milk 1 1/2 cups heavy whipping cream OR half-n-half 1 tsp vanilla extract OR peppermint extract Throw it all in the instant pot, slow cook on low for 2 hours. You can use a slow cooker as well, I use my slow cook setting on my instant pot. Stir in the beginning more frequently so chocolate chips don't stick to the bottom. This is very rich and creamy.
