Four-Bean Enchiladas- A Hearty Vegetarian Meal That's Totally Delicious!
Four-Bean Enchiladas 1 can (15 oz.) black beans, rinsed & well drained 1 can (15 oz.) pinto beans, rinsed & well drained 1 can (15 oz.) cannellini beans, rinsed & drained 1 can (15 oz.) light red kidney beans, rinsed & drained 1 can (10.5 ounces) condensed Cheddar Cheese Soup 1 teaspoon chili powder 16 (6 inch) corn (or flour) tortillas 1 Tablespoon vegetable oil, if using corn tortillas 1 can (10 ounces) prepared enchilada sauce 1 can (8 ounces) tomato sauce 6 ounces (or more) cheddar cheese of your choice Preheat oven to 350°. If you are using corn tortillas, brush both sides of each tortilla lightly with oil. Stack the tortillas and wrap them in a damp dish towel. Place the tortilla stack on a plate and microwave until warm and pliable, about one minute. If you are using flour tortillas, you can skip this step. In a large bowl, combine the condensed soup and the chili powder. Add the rinsed and drained beans and stir to evenly coat them with the condensed soup. In a smaller bowl, combine the enchilada sauce and the tomato sauce. Working one tortilla at a time, on a plate to help contain the ingredients, spoon a bit of the sauce on both sides of the tortilla. Use the back of a spoon or a brush to spread out the sauce evenly and to get full coverage. Spoon about 1/3 cup of the bean mixture onto one end of the tortilla. Form the beans into a log shape so that the tortilla can be rolled around the bean filling. Spray a 9” x 13” pan with nonstick spray. Arrange the enchiladas seam side down in the pan.  Place any remaining enchiladas in a small casserole dish. Use a rubber spatula to scrape all the remaining sauce (and any from the plate you rolled the enchiladas on) and spread evenly over the enchiladas. There should be no exposed tortilla.
