
Just when I thought buttery sourdough couldn't get any better..enter cultured butter 😋 #realfood
Tested out some cultured butter and can say it was a winner 👌😋 On my first date with my now husband, I told him my last meal on earth would be fresh sourdough with butter and flaky sea salt. I still stand by that choice, except make the butter cultured. There is just something so satisfying about bread and butter, right? Unfortunately I have a pretty strong gluten sensitivity, so can't really eat it that often unless I want stomach cramps all day 😠But, sometimes it's worth it 😂 I was just testing the cultured butter here, so don't have exact measurements. But basically, I just fermented cream with a bit of Greek Yoghurt overnight on the bench. Make sure it's pure cream, no thickeners or stabilisers. The next day, once it smells a little 'cultured' and buttery, while the cream and yoghurt mixture until you get the butter clumps. Strain through a cloth, reserving the buttermilk - this is also a yummy treat, tastes like kefir 😋 Use the buttermilk in other recipes, or just drink it 🙂 Form the butter into a clump and rinse it in icy water until the water runs clean.
