Chicken Donne Biryani🌿🍗 👉INGREDIENTS FOR MASALA PASTE: Cinnamon - 1 stick Cardamom - 4 Cloves - 6 Black pepper - 1 tsp Onions - 1 (sliced) Green chillies - 5 (dark green) Adjust green chillies accordingly Methi leaves - 1/2 cup Coriander leaves - 1 cup Mint leaves - 1 cup 👉INGREDIENTS FOR BIRYANI MAKING: Chicken - 500g Seeraga samba rice - 2 cups Hot water - 3.5 cups Ghee - 4 tbsp Whole garam masala (Cinnamon, cloves, green and black cardamom, stone flower, star anise, javithri, kapok buds) Onion - 1 (sliced) Ginger garlic paste - 1 tbsp Salt as per taste Turmeric powder - 1 tsp Coriander powder - 1 tbsp Lemon - 1 Curd - 1/2 cup PREPARATION METHOD: 🫵Add 2 cups of seeraga samba rice into a bowl. Wash twice and add water, soak for 30 minutes. 🫵Take chicken in a bowl and add curd, salt and turmeric powder. Combine well and rest for 30 minutes. 🫵To prepare masala, add 2 tbsp of oil in a frying pan, add whole spices mentioned in masala ingredients, onion slices, green chillies. Sauté until onions are light brown. Add methi leaves, mint leaves and coriander leaves. Fry until the raw smell goes away. Turn off the heat and cool down. Add some water and blend into fine paste. 🫵To make biryani, add 3 tbsp of ghee in a biryani pot. Add whole spices, sliced onions. Fry until onions turn light brown. Add ginger garlic paste and fry it until the raw smell goes away. Add marinated chicken and mix for 2 minutes. Add masala paste and combine well. Cook it until oil appears. Add soaked rice and adjust salt, and 3.5 cups of hot water. Squeeze lemon and add more ghee. Mix well and cover lid. Make sure you stirr in between otherwise it will be burnt. So keep stirring occasionally until it was done. Rest for 15 minutes after flame off. Serve hot and Enjoy!
