
Low Net Carb Burger Buns With Yeast Recipe – Made of Bamboo Flour, Keto And Gluten Free
Today I’m sharing my recipe for bamboo fiber burger buns with yeast. They’re buttery, rich, super soft and fluffy, and easier than you probably think. The best thing is that you can eat them even if you're on a low-carb, keto, or gluten-free diet. How to make bamboo baking flour: • Bamboo Baking Flour -How To Make It? ... Full Recipe 180g coconut milk (100g+80g) 2 tsp sugar free maple syrup 8g (2tsp) dried active yeast 100g bamboo baking flour (80g bamboo fiber and 20g powdered whole psyllium husk ½ tsp salt 1 tsp baking powder 1 tbsp sweetener 2 large room temperature eggs 60g unsalted butter Steps: Heat 100g of coconut milk until just warm (not hot). Pour 2 tsp of sugar free maple syrup into the milk (optional) and mix them. Then blend 8g (2tsp) of dried active yeast with them and leave for 5-10 min to begin fermenting before use. Melt 60g of unsalted butter. Measure the dry ingredients: 100g of bamboo baking flour (80g of bamboo fiber and 20g of powdered whole psyllium husk), If you are not sure how to make this flour, watch my video about it. ½ tsp of salt, 1 tsp of baking powder and 1 tbsp of sweetener (stevia erythritol). Mix them thoroughly. In a separate bowl crack 2 large room temperature eggs. Then add 80g of coconut milk and mix. Pour the melted butter to them and whisk to combine. Then add the fermented yeast and mix them. Stir the dry and liquid ingredients with a spatula thoroughly. Then allow your dough to rest for at least 5 minutes. Squeeze the dough with your hands to bring it together into a loose ball. Knead the dough lightly with your hands for 5 minutes, use a silicone sheet as the dough is actually a little sticky. If the dough is too sticky, knead it on a floured surface. At the beginning of kneading, the dough may fall apart, or you may feel an air bubble in the middle of the dough. Don't worry, just reshape or press the air bubble out and continue rolling/kneading. At the end of the kneading, the dough will be smooth and will not fall apart. Cut the dough for 6 pieces. Roll lightly with your hands until you get smooth round shape. Flatten each dough ball with the palm of your hand until it's about 3,5” across. Place them into a silicone lined baking sheet, spacing at least 1 inch apart. Rise for about 30 minutes on a warm place. Preheat oven to 115F (45C) for 1-2 minutes to get it nice and toasty, then turn it off. Then put the buns inside the oven and let rise. Using a pastry brush, brush egg wash on top and around the sides of each piece. Sprinkle the top with everything bagel seasoning (optional). Place them into the cold oven, and turn it on to 300F (150C). Bake them at 300F for 30 minutes then bake them at 360F (180C) for 30 minutes. Then brush butter evenly over the top.
