Brine the Turkey (Day Before) Combine lemon, orange, brown sugar, salt, bay leaves, Italian herbs, onion, and pepper in a large pot or brining bag. Submerge the turkey and refrigerate overnight. 2. Prep for Roasting Remove turkey from brine and strain well. Place it into your roasting pan. 3. Season Lightly Rub with olive oil and sprinkle lightly with salt, pepper, paprika, and Italian herbs. Add two bay leaves to the bottom of the pan. 4. Roast Bake at 325°F for 15 minutes per pound. Once the skin turns golden, flip the turkey.
