Avocado Egg Sandwich Ingredients: 1/2 avocado, 2 boiled eggs, 6 pickles (cornichons), 1 small red onion, 1 teaspoon whole grain mustard, arugula, lemon, multigrain bread, paprika, salt, black pepper. Instructions: Cut the avocado in half and remove the pit. Score the inside of the avocado into cubes by making vertical and horizontal cuts. In a large bowl, combine the diced avocado, boiled eggs, pickles, and onion. Add mustard and season with paprika, salt, and black pepper. Mix well. Place a layer of arugula on the toasted slice of bread. Spread the egg and avocado mixture over the arugula and squeeze some lemon juice on top. Your sandwich is ready to enjoy!
