Ingredients: For the Pulao: Rice: 500 grams (washed and soaked for 30 minutes) Matar (Green Peas): 500 grams Oil: 1 cup Zeera (Cumin): 1 teaspoon Cinnamon Sticks: 2 Long (Cloves): 8 Black Hole (Black Peppercorns): 10 Ginger Garlic Paste: 1 teaspoon Onion: 1 medium (sliced) Salt: 1 teaspoon Green Chili: 4 (whole) Water: 3 glasses For the Spiced Potatoes: Potatoes: ½ kg (peeled, cubed, and boiled) Salt: ½ teaspoon Dhaniya Powder (Coriander Powder): ½ teaspoon Black Pepper Powder: ½ teaspoon Chili Flakes: ½ teaspoon Rice Flour: 2 teaspoons Green Chili: 3 (chopped) Hara Dhaniya (Fresh Coriander): for garnish Egg: 2 (beaten) Oil: ½ cup (for frying) Instructions: 1. Prepare the Pulao: Heat 1 cup of oil in a large pot. Add zeera, cinnamon sticks, cloves, and black peppercorns. Sauté for a few seconds until aromatic. Add sliced onion and fry until golden brown. Stir in ginger garlic paste and cook for 1 minute. Add matar (green peas) and green chilies. Sauté for 2–3 minutes. Add salt and 3 glasses of water. Bring to a boil. Add soaked rice and cook on medium flame until water is almost absorbed. Cover the pot with a tight lid and simmer on low heat for 10–15 minutes until the rice is fully cooked. 2. Prepare Spiced Potatoes: Mix boiled potato cubes with salt, dhaniya powder, black pepper, chili flakes, rice flour, and chopped green chilies. Dip the potato cubes into beaten egg and fry in ½ cup oil until golden and crispy. Garnish with hara dhaniya and set aside. 3. Assemble: Serve the white matar pulao on a platter. Top with crispy spiced potatoes for added flavor and texture. Raita Recipe: Ingredients: Yogurt: 1 cup Salt: ¼ teaspoon Zeera Powder (Roasted Cumin Powder): ¼ teaspoon Green Chili: 1 (chopped) Fresh Coriander: 1 tablespoon (chopped) Water: 2–3 tablespoons (to adjust consistency) Instructions: Whisk yogurt until smooth. Add salt, zeera powder, chopped green chili, and fresh coriander. Mix well. Adjust consistency with water as needed. Serve chilled alongside the pulao.
