Easy Ghevar Recipe in Hindi | 4 चम्मच घी से हलवाई जैसा परफेक्ट जालीदार घेवर बिना किसी सांचे के •••••••••••••••••••••••••••••••••••••••••••••••••••••••••••••••••• Ingredients: 1 cup all-purpose flour (maida) 1 tsp Gram Flour (Besan) 3/4 cup ghee (clarified butter) 3/4 glass ice-cold water 1 cup sugar 1 cup water A pinch of cardamom powder (optional) Saffron strands (optional) Chopped nuts for garnish (almonds, cashews, pistachios) Instructions: 1. In a mixing bowl, combine the ghee and ice cube. Mix well until the ghee freezes, now remove excess water and ice & whisk it until fluffy. 2. Now mix maida in 3 batches, and add besan. Gradually add ice-cold water to the mixture and knead it into a smooth batter. The batter should have a fairly thin pouring consistency. 3. Heat ghee in a deep frying pan or kadai. Make sure the ghee is hot but not smoking. Add 2-3 drops of batter to check temperature, after that lower the temp. to medium heat. 4. Take a ladleful of the batter and pour it slowly into the hot ghee in a in centre of the pan. This will form a ring-shaped structure. Repeat the process to make a thick layer. 5. Fry the ghevar ring on medium heat until they turn golden brown and crispy. Remove them from the ghee and drain excess oil. 6. In a separate saucepan, prepare the sugar syrup by dissolving sugar in water. Add a pinch of cardamom powder and a few saffron strands for flavor (optional). 7. Bring the sugar syrup to a boil and let it simmer for a few minutes until it thickens slightly. 8. Let the ghevar rings cool completely, add sugar syrup to the ghevar and let spread (soak) for few minutes. Now add mawa/khoya on ghevar. 9. Garnish the ghevar with chopped nuts like almonds, cashews and pistachios.
