Chocolate Crinkle Cookies! ❄️⛄️🍪 Ingredients: 225g dark chocolate (1 1/2 cups) 60g unsalted butter (1/4 cup) 150g brown sugar (3/4 cup) 50g caster sugar (1/4 cup) 2 large eggs, at room temp 1 tsp vanilla extract 120g plain flour (1 cup) 25g cocoa powder (1/4 cup) 1/4 tsp salt Method: 1. In a heatproof bowl, add the butter and chocolate and microwave in 30 second increments until completely melted. 2. In a separate bowl, beat the sugars, eggs and vanilla together until pale and fluffy. Then pour in the cooled melted chocolate mixture. 3. Gently fold in the dry ingredients until just combined. 4. Cover with plastic wrap and place in the fridge to chill for at least 30 minutes. 5. Meanwhile, preheat the oven to 180°C (350°F) and line a large baking tray with parchment paper. 6. Using a tablespoon, scoop the dough into balls, roll in the caster sugar then in the icing sugar and place onto the baking tray. 7. Bake for 10-12 minutes until the top is crackly. Remove from the oven and let cool for a few minutes before rolling in icing sugar again. 8. Serve and enjoy!
