Make a slight cross cut on the tomatoes and boil them for 2-3 minutes to make it easier to remove the skin. Peel and set aside. --- *Step 2: Prepare the Egg-Tomato Mixture* 1. Heat 2-3 tablespoons of oil in a pan or wok over medium heat. 2. Beat the eggs in a bowl with a pinch of salt. 3. Pour the eggs into the pan and scramble them until fully cooked. Remove and set aside. --- *Step 3: Cook the Noodles* 1. In the same water used to boil the tomatoes, add the bay leaf, cinnamon stick, 2 tablespoons of oil, and 1 teaspoon of salt. Bring to a boil. 2. Cook the whole wheat noodles according to the package instructions (usually 8-10 minutes). --- *Step 4: Cook the Vegetables* 1. In the same pan, add the remaining 1-2 tablespoons of oil. 2. Sauté the spring onion, garlic, and ginger until fragrant and translucent. 3. Add the finely chopped tomatoes and cook until they soften and release their juices (about 3-4 minutes). 4. Add the scrambled eggs and mix well. 5. Add the larger tomato pieces and stir. 6. Add water to the mixture and, while boiling, stir in the cornstarch slurry (1 tablespoon cornstarch mixed with 50ml water) to thicken the sauce. 7. Add ketchup, chicken stock powder, and sugar. Mix well and let it simmer for 2-3 minutes. --- *Step 5: Combine Everything* 1. Add the cooked noodles to the pan. 2.
