HOMEMADE SWEETENED CONDENSED MILK with ONLY 2 INGREDIENTS Hello, welcome! 🌞 Pls support me by liking/sharing/subscribing; thank u 💗 / @dessertonomy First of all, for those of you that might wonder why someone would make sweetened condensed milk at home, I must say I have to because I cannot find it in the markets. Also, I cannot find dulce de leche with a thick consistency so I had to make my own: • HOMEMADE DULCE DE LECHE (MADE IN THE ... Sweetened condensed milk is basically syrupy milk that has been thickened after evaporating nearly half of the liquid amount. This thickening process takes a while (nearly 1 hour process for 1 lt or 4 cups of milk.). Milk and sugar is boiled on the stovetop, stirring frequently after nearly half of the liquid is evaporated. The recipe isn't complex at all, it just requires some time. This ingredient needs some patience and staying close to the stovetop nearing the end of the evaporating process. Some more details: 1) Sweetened condensed milk was first made in 19th century. 2) There are contraversions about the true inventor of this ingredient. Most say American Gail Borden is the inventor while others say French Nicolas Appert is the one. And after a few tries, I think I'll make some changes the next time. These are: Using a little more sugar for a thicker consistency. Simmering on a lower heat for a longer time (I had to catch the daylight for the shooting so I cooked on medium-high heat.) Stirring less. I was afraid of burnt bits so I stirred often while the milk wasn't still reduced enough. Using a pot with a wider bottom, so I hope that the larger surface will speed up the evaporation and shorten the total time. I hope you try & like it as well. Bon appetit 😋 (Recipe adapted from Cafe Fernando, makes about 450 ml) INGREDIENTS: 1.2 lt whole fat milk 200 gr sugar (I'll definetely use 250 gr next time) INSTRUCTIONS: In a wide pot, bring together the milk and sugar. Heat on high heat, stirring often until the sugar is completely melted. Keep heating on medium heat until the milk starts to boil. Keep heating on lowest heat, removing the skin and foam formed on top in every 10 minutes. After the mixture has been simmering for 20 minutes, keep a close eye on the mixture and stir after every 5 minutes. At this point, the liquid should've reduced by nearly 1/3. If not, keep heating. After 35 minutes in total, stay next to the stovetop and remove the foam and stir often. The bottom is likely to burn if you don't stir frequently. When the mixture is creamy, reduced by half and has a pale yellow color, remove from heat and pour into your jar or container. To make sure, you can measure the amount. It should be 400-450 ml. If not, pour into the pot and keep heating. Let cool to room temperature for a thicker consistency. NOTES📝: The consistency you see in the video is when the sweetened condensed milk is at room temperature. When straight from the fridge, it is much thicker. Keep a wooden spoon in the mixture when not stirring. You can place a wooden spoon horizontally on the top of the pot to prevent the mixture spilling out. You can use sweetened condensed milk in your coffee, cakes, for making no churn ice cream or you can drizzle it on your fruit platter. You can use a dairy free milk. The total cooking time may vary depending on your stovetop. The best way to tell is to measure the mixture. Keep a cup nearby to measure. It took me approximately 45 minutes in total. If you choose to make with 250 gr sugar, you can remove the mixture from heat when it is 500 ml in total. You can run through a sieve to remove any lumps. If you find the consistency to be too thick, add a few tbsp milk and mix until softened. Keep in a jar covered with a lid and keep in the fridge.
