High Protein Taco soup! This is the perfect high-protein dinner and also is great for meal prep Olive oil 2lbs of ground beef 1 cup onion chopped (1 medium onion 2 tablespoon garlic minced 3 10oz can diced tomatoes with green chilies 2 quart beef broth 2 teaspoon paprika 1 teaspoon pepper 2 teaspoons of kosher salt 2 teaspoon chili powder 1 teaspoon cumin 2 cans of black beans, drained, and rinsed Two cans of pinto beans, drained, and rinsed 1 cup frozen corn thawed Add cilantro at the end (optional) instructions Stovetop Instructions In a soup pot, heat olive oil. Brown beef, onions and garlic for 10-12 minutes until cooked. Add in tomatoes, broth, spices, beans and corn. Stir together.
