Sourdough bagels - these have been my favorite lately. Subtly tangy from sourdough, with a crisp crust and the perfect chew of classic bagel. Save and share the recipe! Ingredients 315g bread flour 35g whole wheat 192g water 70g starter 14g granulated sugar 7g salt *20g brown sugar for water bath Method 1. Add all ingredients to the bowl of a stand mixer and mix until a dough forms. 2. Cover with a damp towel and let it rise until doubled in size (time varies based on dough temperature). Once nearly doubled, refrigerate overnight. 3. On the next day, divide the dough into 115g portions for 5 bagels or 150g for 4. Shape into balls. If the dough feels tight, let it rest for 15 minutes.4. Poke a hole in the center of each dough ball and stretch it with two fingers to form a bagel shape. Let rise for 20–30 minutes until slightly puffy.5. Boil bagels for 20–30 seconds per side, then transfer to a baking sheet. 6.
