🥣 Sabudana Kheer (Sago Pudding for Fasting / Vrat) ⭐ Description Sabudana Kheer, also known as Sago Pudding, is a traditional Indian dessert made during fasting days like Navratri, Ekadashi, or Maha Shivratri. Made with sabudana (tapioca pearls), milk, and sugar, this kheer is creamy, comforting, and mildly flavored with cardamom and dry fruits. It’s gluten-free, satvik, and rich in energy — perfect to keep you nourished during fasting. 🧺 Ingredients ½ cup sabudana (sago / tapioca pearls) 4 cups full-fat milk ¼ cup sugar (adjust to taste) 4–5 green cardamoms, crushed (or ½ tsp cardamom powder) 8–10 cashew nuts, chopped 8–10 almonds, sliced 1 tbsp raisins A few saffron strands (optional) 1 tbsp ghee (for frying nuts) 🕒 Preparation Time: 10 mins 🔥 Cooking Time: 25–30 mins 🍽️ Servings: 3–4 🥛 Preparation Method Step 1: Soak the Sabudana Rinse ½ cup sabudana in water 2–3 times until water runs clear. Soak in 1 cup of water for 2–3 hours (or overnight if pearls are large). After soaking, sabudana should be soft and plump. Step 2: Boil the Milk Heat 4 cups milk in a heavy-bottomed pan. Bring it to a gentle boil, stirring occasionally to prevent burning. Step 3: Add Sabudana Drain soaked sabudana and add it to the boiling milk. Stir continuously to avoid sticking or lumps. Cook on medium flame for 10–15 minutes until sabudana turns translucent and soft. Step 4: Add Sweetener & Flavor Add ¼ cup sugar and crushed cardamom. Stir and let it simmer for another 5–7 minutes till kheer thickens slightly. Add saffron strands (optional) for flavor and color. Step 5: Add Dry Fruits In a small pan, heat 1 tbsp ghee, fry cashews, almonds, and raisins till golden. Add them to the kheer and mix well. Step 6: Serve Serve Sabudana Kheer hot, warm, or chilled. On fasting days, enjoy as a wholesome dessert or light meal. 💡 Tips If the kheer thickens after cooling, add a little warm milk before serving. For a richer taste, use evaporated milk or condensed milk (optional).
