These KOREAN POTATO PANCAKES tried to mess with me! ✨Recipe: 1 lb Potatoes ½ cup cornstarch 2 tbsp sugar ½ tsp salt Mozzarella Sticks or Slices Directions: 1. Peel and cube the potatoes. Boil in a medium pot until tender. (A fork can easily pierce them) 2. Mash the potatoes using a potato masher, or if you don’t have one you can use a fork. 3. Mix in your sugar and salt, then combine cornstarch small bits at a time. 4. Divide your dough into around 6 - 8 equal portions, roll into a ball, then flatten. 5. Place your mozzarella cheese in the center and wrap the dough around the cheese and form into a tall pancake shape. 6. Add cooking oil to cover the bottom of a medium pan on medium heat. Fry the potato pancakes for 3 - 4 minutes per side or until golden. 7. Garnish with green onion, serve and enjoy!! 😊
