The BEST taco recipe you'll EVER try! (maybe) - Birria Tacos

Birria Tacos was something that we saw it going viral but never had it before. It was one of those dishes that you see and your mouth just waters, its just something that you want to try immediately. The viral version usually has beef as a protein but we do not eat read meat so we has to adapt the recipe in chicken variation. I have also tried this recipe with mushrooms for vegetarian peeps out there. It might not be authentic recipe but its really really good tasting recipe. Hope you give it a try and let us know how it goes. Recipe yields around 8 tacos Corn Tortillas 2 Chicken Breasts 2 tbsp Chipotle peppers in adobo sauce 3-4 Arbol Chili Peppers 3-4 Guajillo Chil peppers 2 Bay leaves 2 Tomatoes 4-5 gloves Garlic 1 Onion 1 Chicken Boullion cube 1 tsp cumin powder 1 tsp Paprika 1 tsp Mexican Oregano Oaxaca cheese Cilantro Salt to taste Procedure : 1. Take a sauce pan and add Tomatoes, onion, garlic, peppers, Bay leaves and water (enough to submerge everything in the water). Let it boil for about 15 mins. 2. Let it all cool down, once it cools down pour it in the blender. Now add salt, cumin powder. Paprika, chicken bouillon cube and chipotle peppers in adobo sauce with the boiled peppers and tomato mixture. Blend until you get a sauce consistency from it. 3. Now Turn on your instant pot on Saute mode. Add some add and sear the chicken for about 2-3 mins on each side. 4. Then add the blended mixture from earlier to the instant pot with the chicken. Depending on the version of instant pot you have, you will need to cancel the saute mode and switch it to manual mode for 9 mins. 5. Once you have the chicken cooked, you may either shred the chicken or chop it up depending on your preference. Do not discard the sauces since its the consomé (the best part of the barrio tacos) 6. Let’s begin making the tacos, in a pan add some oil (preferably neutral high heat cooking oil) . Dip your tortilla in the consomé before putting it on the pan. Now add the shredded oaxana cheese to the tortilla, add chicken on top then onion and cilantro ( this is depending on your preference again but not mandatory) 7. Once you see the cheese melting flip the taco in half and let it cook on both side. 8. Now serve with the Consomé, cilantro and onions. As always adjust the seasoning per your own preference, I usually do with most recipes. Hope you enjoy!
