
Easy Spinach & Ricotta Stuffed Shells | Step-by-Step!
This Spinach & Ricotta Stuffed Shells recipe is simple, cheesy, and perfect for any occasion. Follow along for an easy-to-make dish your whole family will love—plus, it’s easy to increase for larger batches (as I have done)!😊 Ingredients: 16 jumbo stuffed shells (cook extra to allow for few breaking while pasta cooks) 2 tablespoon Olive Oil 2 teaspoons fresh Garlic, minced 4 or more cups (packed) fresh Spinach Leaves, roughly chopped 12 oz Ricotta Cheese (or entire 17 oz container) 1 cup shredded Mozzarella Cheese 1/4 cup grated Parmesan Cheese, plus more for serving 1 large Egg 1 tablespoon fresh Basil, chopped 1 teaspoon Salt 1/2 teaspoon Black Pepper 1 1/4 cups Marinara Sauce (use ready made or make your own sauce) 1. Preheat oven to 375 F. Cook pasta al dente, according to package directions. Drain and rinse with cold water and set aside. 2. Heat oil, when begins to shimmer, add the garlic and cook for a minute or two. Add spinach and cook, stirring occasionally, until leaves begin to wilt, but are still bright green (about 3 to 4 minutes). Spinach should be reduced by half. Remove from heat and let cool. 3. In a mixing bowl, stir together spinach, ricotta, mozzarella, Parmesan cheese, egg, basil, salt and pepper until combined. Pour some marinara sauce into bottom of a shallow 8 x 8 inch baking dish. Stuff each pasta shells with a generous amount of spinach and ricotta mixture, and place in baking dish. 4. Cover with remaining sauce and rest of mozzarella, and bake covered with aluminum foil for 20 minutes. Remove foil and continue baking until the top begins to brown and sauce is bubbly (another 5 to 10 minutes). Serve warm with a dusting of Parmesan.
