🍇 recipes: soaked oats: ½ cup oats, pinch of salt, 1 tbsp each chia and flax seeds, 1 cup soy milk, 3 tbsp soy yogurt; topped with blueberries and flakey salt marinated aubergine: 1 aubergine, cut into slices lengthwise, rubbed with lots of salt and olive oil bake at 200°c for 30 minutes marinade: 2 tbsp harissa, 1 tbsp maple syrup, juice from ½ lemon miso sesame tofu: 1 tsp sesame seeds, 1 tsp sesame oil, 1 tbsp soy sauce, 1 tsp miso paste, pepper bake at 200°c for 20-25 minutes bean salad: thinly sliced radishes, red onion and zucchini frozen peas and kidney beans fresh dill and parsley dressing: extra virgin olive oil, white wine vinegar, honey, salt, pepper, spicy paprika (you will need a lot of salt here as the veggies soak it all up) focaccia: 400g bread flour, 12g salt, 1 tsp dry yeast, 320g water, 15g olive oil rest for 2 hours 3 sets of stretch & folds every 30 minutes rest in the fridge for 1-2 days transfer to baking dish and rest for 3-4 hours sprinkle with desired toppings (i used fennel seeds, basil and salt) and olive oil and dimple with your oiled hands bake at 230°c for 30-35 minutes, cool for 10 minutes before slicing banana muffins: https://lovingitvegan.com/vegan-banan...
