Super Crispy Techa Potato Sticks Ingredients For Thecha Paste: 3–4 green chilies 5–6 garlic cloves 2 tbsp raw peanuts Salt – to taste 1 tbsp oil A handful of fresh coriander leaves For Potato Mixture: 3–4 boiled potatoes 1 tbsp cheese sauce ½ tsp black pepper powder 3-4 tbsp corn starch Instructions 1. Make the Techa Paste: Heat a pan with a little oil. Add peanuts, green chilies, garlic, and salt. Roast for 2-3 minutes until aromatic. Transfer everything to a grinder or silbatta, add coriander leaves, and grind into a coarse paste. 2. Prepare the Potato Mixture: Put the boiled potatoes into a food-grade zip pouch. Add the prepared thecha paste, cheese sauce, black pepper, and corn starch. Mix everything well by pressing and kneading the pouch from outside. 3. Shape & Freeze: Flatten the pouch evenly so the mixture spreads into a thick sheet. Freeze for 1–2 hours until it becomes firm. 4. Cut & Fry: Take it out and cut into long stick shapes.
