HOW TO MAKE SPINACH FETA STUFFED MUSHROOM Keto Spinach Feta Stuffed Mushroom Bites low carb, easy to make Recipe This simple & fast appetizer or snack consists of a 3 ingredient filling – feta cheese, sauteed spinach and garlic. The cheese is salty enough to flavor these stuffed mushrooms, so no added salt is needed. Recipe yields 12 mushrooms You may remove hard stems Recipe easily doubled or halved Baking time will depend on the size of the mushroom How much filling to use per mushroom will also depend on the size of the mushrooms INGREDIENTS 1 tablespoon Extra Virgin Olive Oil 2 cups Fresh Spinach, packed (60 grams) 3.5 ounces Feta Cheese (100 grams) 1 Garlic Clove - minced 12 Button Mushrooms (preferably white) Preheat oven to 400°F. Prepare baking sheet with parchment paper. Thoroughly clean your mushrooms. Heat oil in a skillet, then add your minced garlic and saute for about a minute before adding the chopped spinach. Stir constantly until the spinach is wilted (darker in color and very flexible). Remove from the heat. In a small bowl, combine the sauteed spinach garlic filling and the crumbled feta (use a fork). Fill each mushroom with a heaping teaspoon of the filling. Place each mushroom onto your baking sheet and bake for 15-20 minutes or until your liking.
