Pepper Jack Mac and Cheese

Here’s a new twist on classic dish. Try making mac & cheese with pepper jack cheese. This adds a little kick to the sauce that makes this a more grown-up version traditional food. Serve this ooey gooey pasta as a side dish or main dish. In this video you’ll also learn how to make a basic white sauce or roux. RECIPE The Pasta: 3-4 C uncooked macaroni; I used cavatappi pasta 1/4 C margarine, cubed 1/4 C flour 1/2 tsp. salt 1/2 tsp. ground pepper 1/2 tsp. black pepper 1/2 tsp. Worcestershire sauce 1 1/2 C milk 1/2 C heavy whipping cream 2 C pepper jack cheese, shredded 1 C cheddar cheese, shredded The Toppings: (optional) 3/4 C bread crumbs 3/4 C French fried onions The Directions: 1. Cook the pasta according to the package directions. Drain and set aside. 2. In a large sauce pan, melt the butter. Stir in the flour. Gradually add the milk and cream stirring constantly to avoid lumps. Add the salt, ground mustard, pepper, and Worcestershire sauce. Bring to a low boil and cook until thickened. 3. Add the macaroni to the sauce and fold until our noodles are covered. Sprinkle with toppings if desired. 4. Bake uncovered at 350° for 20 to 25 minutes. VARIATIONS ***Replace the 1/2 C whipping cream with milk; thus reducing calories.
