I made these cookies for the EGC bake sale at PS1. They were a great hit! I just love a good bake sale, with lots of different treats to choose from, and all the money going to a good cause. I was told I my baked goods help raise over $300. Wow! I wish I could have stopped by, but I had hospital appointments that day, so I couldn't see what all was donated, but it must have been good, because they raised a lot of money. I did sample a cookies and they were so good. Just make it. Enjoy, Michael P.S. Don't forget to hit like and subscribe. In a medium bowl, pour 1/3 cup sugar and the zest from 1 lemon. Rub the sugar and zest together to release the oils. Then add in 1/3 brown sugar the 3/4 cup butter and cream until light and fluffy. Add in 1 egg yolk, 1 teaspoon vanilla and 1/2 cup molasses and beat until creamy. Lastly add in 2 1/2 cups flour, 1 1/2 teaspoons ginger, 1 1/2 teaspoons cinnamon, 1 teaspoon baking soda, 1/2 teaspoon cardamom and 1/2 teaspoon salt. Mix until well combined and chill for 1 hour. Preheat the oven to 375°. Scoop out the dough into equal portions and roll into balls. Coat in powder sugar and bake for 12 minutes or until done. Allow to cool before serving.
