What is sourdough discard? Sourdough discard is the extra bit of sourdough starter that you remove when feeding it. Instead of throwing it away, you can use it to make things like pancakes, waffles, and other tasty treats because it still has active yeast and flavor. It's a way to avoid wasting and create yummy foods. Ingredients: 3 3/4 all purpose flour 2 tablespoons sugar 2 1/4 teaspoons instant yeast 2 teaspoons salt 1 cup sourdough discard 1 cup warm water 1 egg for egg wash(golden color for bagels) Toppings(optional) Recipe: In a stand mixer add flour, sugar, yeast, and salt. Mix to combine Add sourdough discard to warm water and stir, on low speed + discard mixture to flour mixture. Increase to medium speed. Knead dough for 4-5 minutes If needed add 1 tablespoon of water at a time to dough(if dry) Transfer dough to greased bowl and cover with plastic wrap. Let rise for 2 hours or until doubled in size On a lightly floured surface transfer dough and separate to 8 equal sized pieces. Flatten somewhat and poke hole in the middle- stretch out slightly Preheat oven to 425 degrees and line baking sheet with parchment paper Boil large pot of water, when boiling add 1 tablespoon sugar and 1 tablespoon baking soda to water (this process puffs up the bagels a little bit before putting them in the oven) Place bagels in and let boil 30-60 seconds each side Remove bagels and let cool Add egg wash on top of each bagel and add toppings if desired Bake at 425 degrees for 25 minutes Let cool before cutting and enjoy!
