
Smoky Chili Cornbread Pot Pies

INGREDIENTS:1 onion1 bell pepper2 pounds of ground meat of choice2 cans beans of choice30 ounces diced tomatoes1 can of tomato paste1 bottle beer - I used Guinness foreign extra stout. Regular Guinness is fine1 can beef brothSplash of liquid smoke1 spoonful chipotle pepper paste1 can diced green chilis1 jar nopales (optional)Seasonings: salt, pepper, garlic and onion powder, smoked paprika, chili powder (I had several different ones and used some of each - just use what you have), and I know it sounds strange but TRUST ME: cinnamon and unsweetened cacao powder, 1-2 TBS each. Adjust all the seasonings to your own taste.DIRECTIONS: Cook off the bell pepper, onion, and meat in a skillet and drain excess oil. Add everything to the crockpot and cook on low for 8 hours. Spoon into oven safe bowls, about 2/3 of the way full. Top with cornbread mixture - I’ve posted my cornbread recipe previously. Find it on my page!
