(medium size) ginger & garlic paste 1 tbsp green chilies 2 nos. tomatoes chopped 2 nos. (medium size) Kashmiri chili powder 1 tbsp red chili powder 1 tbsp cumin powder 1 tbsp coriander powder 1 tbsp brown onion paste 1 cup fresh coriander chopped garam masala powder 1 tsp meat masala powder 1 tsp mint leaves half a cup fresh ginger julienne crushed fennel seeds half tsp black pepper 1 tbsp paya stock as required For Garnish: coriander leaves mint leaves ginger green chilies Method: Take mutton paya or goat trotters, clean them, and wash them by applying plain flour, rubbing them, and then washing them with cold water. In a pressure cooker, add mutton paya, whole garam masala, garlic cloves, water, turmeric powder, and salt. Mix all the ingredients well. Pressure cook for 30 minutes on high flame. Strain the paya and keep the stock. Mutton paya is perfectly cooked. In a pan, add cooking oil, cumin seeds, and onion, fry for 8 minutes on medium flame. Once the onions are light brown in color, add green chilies, ginger & garlic paste and saute for 5 minutes on low flame. Add tomatoes chopped and salt, and cook for 7 minutes on medium flame. Cover and cook for 10 minutes on low flame. Now open the lid and mix well. Add Kashmiri chili powder, red chili powder, cumin powder, and coriander powder, and saute for 5 minutes on low flame. Make a brown onion paste by blending fried onions adding a little water, adding to the masala, and mixing well. Add fresh coriander, garam masala powder, and meat masala powder, mix well, and cook for 5 minutes on medium flame. Now add the cooked paya \ trotters, and mix well with the masala. Add crushed fennel seeds and black pepper and mix well. Now add 1 cup paya stock, and mix well with the paya. Cover and cook for 10 minutes on medium flame. Now open the lid and mix well.
