Link for my go-to napping spot: https://www.weareplufl.com?snowball=ANNA89600 Ingredients for Kodiak Protein Pumpkin Muffins: 2 cups Kodiak Power Cakes Buttermilk Flapjack Mix (this takes the place of all flour options like, oat flour, coconut flour, almond flour, and all purpose flour). ¾ cup milk ¾ cup light brown sugar ¼ cup avocado oil 1 cup canned pumpkin puree 1 large egg 1 ½ tsp. Cinnamon (or pumpkin pie spice) 1 tsp. Vanilla extract ¼ cup mini chocolate chips (optional) Instructions for this Protein Muffin Recipe: 1. Preheat your oven to 350°F and line a muffin tin with paper liners or lightly grease with cooking spray. 2. Mix all of the ingredients together in a large mixing bowl. Stir until well mixed. (You are adding in the dry ingredients and the wet ingredients at the same time) 3. Add mix-ins, such as chopped nuts or dark chocolate chips, for extra flavor and texture. 4. Scoop the batter into the muffin cups prepared with the liners, filling each cup about two-thirds full. 5. Bake for 15 minutes, or until a toothpick inserted into the center of a muffin comes out clean. 8. Remove the muffins from the muffin pan and let them cool on a cooling wire rack.
