
Red Curry with Salmon #shorts #short
INGREDIENTS: 1 lb Salmon Fillet 2 tsp of salt 2 tsp of black pepper 2 cloves garlic, minced 2 tsp red curry paste Coconut curry: 2 tablespoons avocado or olive oil 1 small onion, diced 4-6 small potatoes cut into quarters 1 Tbsp of red curry paste 2 - 14ounce can coconut milk 1 tablespoon of fish sauce (you can also use light soy sauce) 1 Tbsp of brown sugar Some lime juice Add some chopped cilantro leaves and green onion for garnish Instructions: 1. Cut up the salmon into 5 large pieces and marinade the salmon using salt pepper garlic and curry paste. Leave it in the fridge for 30 minutes 2. In a hot pan on high heat, add in some oil and cook the salmon on each side for 4 minutes. Then remove the salmon. 3. In the same pan, add some oil, chopped onions and curry paste 4. Cook on medium heat until the oil from the curry comes out, roughly around 4-5 minutes 5. Next, add in the potatoes and cook tile gold brown on all sides. 6. Add in the coconut milk and fish sauce and cook for 10 minutes. Stir often 7. Then add the salmon back into the pan 8. Add in the brown sugar and taste and adjust to your preference 9. Cook them on low simmering for 20 minutes. Add lime juice to balance out the flavor 10. Garnish with some chopped cilantro and green onion 11.
