I finally made Pakimchi (green onion kimchi)! The spicy pakimchi I quickly whipped up yesterday is perfectly ripe today! So, I prepared Jjagyechi (Jjajang Ramyeon + Egg + Cheese) loaded with Cheongyang chili peppers. 🥹 ​The green onions were grown by my father! They weren't tough, and the size was just right, so I simply had to make pakimchi. ⭐️ I made the super simple seasoning with ingredients I had at home (rice + aekjeot (fish sauce) + Cheongyang chili powder + plum extract + a bit of ginger powder + a little sugar + corn syrup). Maybe it's because the green onions themselves were so delicious, but it tasted absolutely amazing! 🥹 ​I was really craving Jjajang Ramyeon, especially Jjagyechi, after a long time. Adding those spicy and refreshing Cheongyang chili peppers creates a perfect balance: the first bite is savory and creamy from the egg and cheese, and the finish has the clean heat of the chili! Eating it with a huge pile of pakimchi—there is truly no greater happiness. ❤️ I enjoyed it so, so much after a while. ​Now that the pakimchi is made, I have the happy dilemma of figuring out what to eat next! 🤦🏻‍♀️ The classic, trustworthy combination of Jjajang Ramyeon and Pakimchi... it was a legendary taste that didn't disappoint today either!
