Ingredients 600g Lamb mince (15%-20% fat) 1 Small red onion, grated - strained and liquid discarded 1 tbsp Tomato purée 1/4 cup Feta, crumbled 2 tbsp Mint, finely chopped 1/4 cup Parsley, finely chopped 1 tbsp Garlic, minced Dry seasonings 2 tsp Smoked paprika 1/4 tsp Ground black pepper 1/2 tsp Cayenne pepper 1/2 tsp Chilli flakes 1 tsp Salt Method - Step 1 - In a large bowl, add the mince and all of the seasoning. Mix well to combine. Cover and refrigerate for at least 4 hours or for best results overnight. Remove from the refrigerator 30 minutes prior to cooking. Step 2 - Pre heat the oven to 220c Grease a baking tray/sheet pan, Spread the mixture evenly, divide into 6 long kebabs using a flat sided kitchen tool or something similar. Then make shallow indents along the kebabs and give a light spray or drizzle of oil. Cook for 10 minutes on the middle shelf, then on the top shelf, grill/broil for 3-4 minutes on the max temperature. Step 3 - Remove from the oven. And let it cool, drain off any excess oil and serve with flatbreads, your favourite sauces and salad. Enjoy!
