Beef Paya Recipe | Beef Trotters Recipe | بڑے پائے بنانے کا آسان طریقہ Beef Paya (Beef Trotters) Recipe Ingredients: 2 beef trotters (paya) 1 large onion, finely sliced 2 tomatoes, chopped 4-5 cloves garlic, crushed 1-inch piece of ginger, crushed 2-3 green chilies, slit 1/2 cup yogurt 1/2 teaspoon turmeric powder 1 teaspoon red chili powder 1 teaspoon coriander powder 1 teaspoon garam masala powder 1-2 bay leaves 4-5 cloves 1 stick cinnamon 2-3 green cardamoms 1 teaspoon cumin seeds Salt to taste Fresh coriander leaves for garnishing 2-3 tablespoons ghee or oil Water as required Instructions: Prepare the Paya: Clean the beef trotters (paya) well and soak them in water for about 30 minutes. Then rinse them thoroughly to remove any impurities. Cook the Trotters: In a large pot, heat some ghee or oil over medium heat. Add the whole spices: cinnamon, cardamoms, cloves, and bay leaves. Sauté them until fragrant. Add Aromatics: Add the sliced onions and sauté until golden brown. Now, add crushed ginger, garlic, and slit green chilies. Cook for another 2-3 minutes until the raw smell disappears. Add Tomatoes and Spices: Add the chopped tomatoes to the pot and cook until they soften and release oil. Add turmeric powder, red chili powder, coriander powder, and salt. Stir and cook for 2-3 minutes until the spices blend well. Cook the Trotters: Now, add the cleaned beef trotters into the pot and stir them well to coat them in the spices. Add yogurt and cook for 5 minutes on medium heat, allowing the yogurt to incorporate with the spices. Simmer and Pressure Cook: Add enough water to cover the trotters. Stir and bring the mixture to a boil. Once boiling, reduce the heat, cover, and let it cook on low for 3-4 hours. Alternatively, you can pressure cook it for about 30-40 minutes on medium heat until the trotters are tender and cooked through. Final Touch: Once the trotters are cooked, check the consistency of the gravy. If it's too watery, let it simmer uncovered for some time to reduce. If it's too thick, add some water to adjust the consistency. Add garam masala powder and mix well.
