#Rajma_recipe #High_protien_rajma #Kideny_beans Ingredients Rajma 250g 2 bay leaves 4-5 black pepper 1 tsp salt 2 tbsp Oil 1 tsp cumin seeds (jeera) 1/8th tsp asafoetida (hing) 18g or 4 cloves garlic cinnamon 1 mace 30g ginger 1 green chilli 1 medium onions 4 tomatoes 10-12 springs fresh coriander 2 tsp coriander seed powder 1/2 tsp turmeric powder 1 tsp garam masala 1 Vegitable masala Method Soak the beans overnight (or for at least 8 hours) in plenty of water. In a pressure cooker add 4 cups of water, Add the soaked drained beans. Cook the beans till they are completely soft. This took 2-3 whistles in the pressure cooker. While the rajma is cooking, prepare the masala. Pound the ginger, garlic and green chillies, onion , tomato, green coriander into a blender. Alternately, you can also finely chop them. Add oil in kadhai on high heat. Once the oil is hot add in the asafoetida , cumin seeds,bay leaves ,black pepper,mace, clove ,cinnamon and let them sizzle. Add Prepare paste and cook till the gravy releases oil. Once the gravy is ready add the spice powders (turmeric, coriander, vegetable masala,salt and garam masala ). Roast them for a few seconds to release their aroma but be careful not to burn the spices. Cook this masala into a thick reduction without a lid till all the water from the tomatoes has evaporated. You should be able to see the oil releasing from the sides. That's when you know it's ready. Once your masala has reduced to a thick paste, add it in the beans and one glass of water. Let the beans simmer on low heat together with the masala for a few minutes and absorb all its flavours.
