
Slow Cooker Potato Bacon Soup
This is probably my favourite comfort food. Potatoes & Bacon in Cheesy Creamy Broth - what could be better? ππ If you would like to make it, here is my recipe: Ingredients: 4 large potatoes peeled and cubed 12 slices bacon, cooked & diced (save half for topping) 1/2 medium onion, diced 2 garlic cloves minced 1 teaspoon salt 1/4 teaspoon ground black pepper 2 cups chicken broth 4 tablespoons butter or margarine 1/4 cup flour 2 cups milk 1 cup shredded cheddar cheese 3/4 cup sour cream Diced green onions for topping Shredded cheddar cheese for topping Extra bacon from above for topping Directions: Peel & cube the potatoes & place into slow cooker. Dice the onion & mince the garlic & place on top of the potatoes. Cook the bacon in the air fryer until crispy. Let cool & cut into small pieces. (Reserve half for the topping when serving the soup). Place half on top of the potatoes. Mix the chicken bouillon into 2 cups hot water & pour over the potatoes. Sprinkle with the salt & pepper. (Add more later if needed, to taste). Cover & cook on high for 3 to 4 hours or low for 6 to 8 hours, until the potatoes are tender. When the soup is about 30 minutes to being done, make the roux. In a small saucepan, melt the butter or margarine. Slowly add the flour & whisk until it is a paste. Next add the milk & continue to whisk until the mixture gets a little thick. Pour into the soup & stir. Add the sour cream & cheese & stir to combine into the soup. Let cook for another 30 minutes to let the roux thicken the soup.
