The Best Gluten-Free Swedish Apple Cake (Appelkaka) I Collaboration #SwedishRecipes
Looking for a delicious gluten-free version of a classic Swedish dessert? In this video, I'll show you how to make a traditional Swedish Apple Cake (Appelkaka) with a gluten-free twist. This cozy Scandinavian apple cake is simple to make, packed with apple flavour, and perfect for dessert, coffee breaks, or sharing with family and friends. Whether you're gluten-free or simply looking to explore Swedish baking traditions, I hope you'll enjoy this recipe as much as I do. Swedish Apple Cake 3 - 4 apples 4 eggs 7 tbsp or just under ½ cup butter 1 tsp vanilla extract 1 + ¼ cup granulated sugar or my adaptation of 1 cup sugar + ¼ cup maple syrup 1 + ¾ cup gluten-free flour (I used the Robin Hood general purpose mix) If you use your own flour mix, please add ⅛ tsp xantham gum ¾ milk or my adaptation of ½ cup plain Greek yogurt with ⅛ cup + tbsp water 2 tsp baking powder 1 tsp cinnamon pinch salt ⅛ tsp baking soda Melt the butter over low heat. Remove and cool when melted. Prepare the springform pan by thoroughly greasing the sides and lightly greasing the bottom then add a piece of parchment paper to the bottom. NOTE: You want to you a springform pan or a pan that you will serve the cake in because you do not want to flip it upside down to remove it from the pan. Peel the apples and slice off the 4 sides to leave the core, then slice the side to about ¼ inch thickness. Put aside. Mix the Greek yogurt if you are using that option. In a mixing bowl break your eggs and mix them well with a whisk. Add the maple syrup, then slowly add the sugar while whisking, and add the vanilla extract. Mix all the dry ingredients together then slowly add this to the liquid while stiring. Mix the cooled butter into the milk or yogurt mixture. Then slowly add that to the batter and fold with a spoon. Pour the batter in your prepared pan and put the apple slices on top in a nice circular pattern. Top with a sprinkle of cinnamon and sugar. Bake at 325 F for 35 to 45 minutes and 350 F for 5 to 10 minutes more. Test the cake with toothpick and it is done when the toothpick comes out of the center looking clean. Let cool in the pan for at least 45 minutes then you can remove the springform side by loosening the hook.
