Tasty Channa Pulao Recipe 🤤🔥 | How to Make Channa Pulao | دیگی چنا پلاؤ | Ish Naz Food Lab Channa Pulao is a delicious and aromatic rice dish made with chickpeas (channa), fragrant basmati rice, and a blend of traditional spices. This dish is perfect for vegetarians and a great alternative to meat-based pulao. It has a rich, slightly spicy, and savory flavor, making it a satisfying meal on its own or a great side dish for curries and yogurt-based dishes. Ingredients: Basmati Rice – 2 cups (soaked for 30 minutes) Chickpeas (Channa) – 1.5 cups (boiled) Onion – 2 medium (sliced) Tomatoes – 2 medium (chopped) Green Chilies – 3-4 (slit) Ginger-Garlic Paste – 1 tablespoon Yogurt – ½ cup Cooking Oil or Ghee – ¼ cup Cumin Seeds – 1 teaspoon Bay Leaf – 1 Black Peppercorns – 5-6 Cloves – 3-4 Cinnamon Stick – 1 small piece Cardamom (Green and Black) – 2 each Salt – to taste Red Chili Powder – 1 teaspoon Turmeric Powder – ½ teaspoon Coriander Powder – 1 teaspoon Garam Masala Powder – ½ teaspoon Water or Stock – as needed Instructions: 1. Heat oil or ghee in a deep pot and add cumin seeds, bay leaf, black peppercorns, cloves, cinnamon, and cardamoms. Sauté until aromatic. 2. Add sliced onions and cook until golden brown. 3. Stir in ginger-garlic paste and cook for a minute until the raw smell disappears. 4. Add chopped tomatoes, green chilies, and all powdered spices (salt, red chili powder, turmeric, coriander powder). Cook until the tomatoes soften and release oil. 5. Mix in yogurt and stir well. Let it cook for a few minutes until the masala is well combined. 6. Add the boiled chickpeas and mix well with the masala. Cook for a couple of minutes. 7. Pour in the required amount of water or stock (typically 2 cups of liquid for every 1 cup of rice). Bring to a boil. 8. Add the soaked and drained basmati rice. Stir gently and let it cook on medium heat until the water is almost absorbed. 9. Cover with a lid, reduce heat to low, and let it cook (Dum) for 10-15 minutes until the rice is fully cooked and fluffy. 10. Sprinkle garam masala powder and give it a final mix. 11. Serve hot with raita, salad, or pickles. This Channa Pulao is not only easy to prepare but also packed with protein and flavors, making it a wholesome meal for any time of the day!
