DELICIOUS COCONUT CURRY FISH STEW: SIMPLE RECIPE FOR HOME COOKING

In our family we love fish and often prepare dishes from fish and seafood using simple and quick recipes. So, we want to offer the following recipe to your attention for making a delicious coconut fish stew in just about 30-40 minutes for your family's enjoyment. Please see the recipe below and let me know in the comments if you have made it and how it came out. :-) Ingredients: 2 lb of salmon (or you can use cod, tilapia, steelhead trout or any fish you like) 1.5 onions 1-2 carrots Juice and zest of 1-1.5 lemons 1 or 2 cans of coconut milk (depending on how thick you like your broth) 3/4 glass of water 3-4 gloves of garlic Optional: 1 lb of mushrooms (cremini, porcini or champignons) Dill, cilantro or parsley for decoration Spices to taste: salt, black pepper, paprika, curry, coriander, cumin, turmeric Side: white, basmati, Jasmin, brown or wild rice Cut fish into edible chunks. Chop onions and sauté until golden brown. Add crushed garlic and grated carrots. Add fish and stir well. Mix in spices. Add coconut milk, water and lemon zest/juice. Decrease the heat and sauté under the lid until ready (about 20 minutes). Put on the plate, decorate with fresh herbs and serve with rice. Enjoy!
