Red Velvet Cupcakes | How to make red velvet cupcakes| Cream Cheese Frosting | Frosting Recipe

Ingredients:  Cupcake Batter: • 1/2 cup all purpose flour • 2 tbsp cocoa powder (unsweetened) • 1 ½ tsp baking soda • ¼ tsp salt • ¾ cup granulated sugar • 2 large egg • 2 1/2 tablespoons of curd  • 1 1/2 tsp vanilla extract • 1/4 tablespoons of vegetables oil  • 1 tbsp red food colouring( or as needed)  Cream Cheese Frosting: • 125 gm cream cheese, softened • 50 gm of softened butter  • 3 cups powdered sugar • 1 tsp vanilla extract Orange zest and food colour optional  Preheat the Oven • Preheat your oven to 180°C  Step 1: Make the Red Velvet Batter • Add ¼ cup of oil, 2 eggs, 1½ teaspoons of vanilla extract, and 2½ tablespoons of curd. Mix everything well until smooth and well combined. Step 2:  • Place a strainer over the bowl and add ½ cup of flour. Sift the flour, then add ¼ cup of powdered sugar and sift again. Next, add 1½ teaspoons of baking powder, a pinch of salt, sift 2 tablespoons of cocoa powder. mix well until the batter is smooth and fully combined. Make sure there are no lumps in the batter. • Add red food coloring to your batter and mix well. You can add a few more drops if needed to achieve your desired shade. Step 3: • Assemble the Cupcakes • Fill each cupcake liner ¾ with the red velvet batter. • Tap your baking tray gently on the counter to release any air bubbles. Step 4: Bake the Cupcakes • Bake for 15 minutes, or until a toothpick inserted comes out clean.  • Transfer the cupcakes to a wire rack to cool completely Step 5: Make the Cream Cheese Frosting 1. Moving on to the frosting, take around 50 grams of softened butter and beat it until it reaches a creamy texture. 2. Next, add 125 grams of cream cheese and blend it with the butter until smooth and well combined. 3. Scrape down the sides of the bowl and blend again to ensure everything is well mixed. 4. Time to add the sugar! Sift ½ cup of powdered sugar and blend to combine. This recipe requires 1½ cups of powdered sugar, so add it half a cup at a time to ensure the frosting mixes well and makes the process easier. You can adjust the amount of sugar to your taste, add a little more or less depending on how sweet you want your frosting to be. 5. Add a teaspoon of vanilla extract and give it a quick mix. Then, if you’d like, add some orange zest for extra flavor and mix again. This step is optional but adds a nice citrusy touch 6. Lastly, add a few drops of food colouring and mix well until you achieve your desired shade. Once the frosting is ready, cover it and let it chill in the refrigerator for 15 to 20 minutes before using. This extra step makes frosting your cupcakes much easier! 7. Take a piping bag and attach your preferred nozzle. I’m using a Russian nozzle to create a floral design on my cupcakes. Pour the frosting into the bag, then gently push it down to remove any air pockets. Add more frosting and repeat the process until your bag is fully loaded. Finally, start frosting your cupcakes. Step 6: Decorate & Serve • Pipe or spread the frosting on cooled cupcakes. • Optionally, top your creation with a handful of sprinkles and your favourite fruit for an extra burst of flavour.
