Healthy Zucchini Homemade Gluten Free Bread - No kneading, no long resting time, no yeast required! YES it IS possible, SUPER easy to make and so so yum ๐Ÿ˜ This bread is packed with fiber, vitamins and minerals. Save the recipe below and comment โ€œYESโ€ if youโ€™re going to make it! ๐Ÿ˜๐Ÿ˜๐Ÿ˜ INGREDIENTS: 1 medium zucchini 1 1/2 cups gluten free all purpose flour (I use GF Wholemeal) 1 1/2 cups gluten free oat flour 1 tbsp baking powder 3/4 cup gluten free plant-based milk of choice (I use GF oat milk) Toppings: mixed seeds and rolled oats HOW-TO: Preheat oven to 180ยฐC. Line a baking form with parchment paper. Wash and grate zucchini (squeeze out as much liquid as possible). In a large mixing bowl, combine grated zucchini, soy milk, all purpose flour, oat flour, and baking powder. Stir the mixture until all the ingredients are well combined. - - Let the batter sit for around 10 mins. This allows the liquid to be absorbed and results in a better-textured bread. Pour the mixture into the baking form. Top some mixed seeds and rolled oats on top. Bake for 50-60 mins. Check with a toothpick inserted into the centre, if it comes out clean and the top is golden brown means the bread is done โœ”๏ธ Allow to cool in the pan for a few minutes, then transfer it to a wire rack to cool completely before slicing and serving.
