Instead of a maida base, they’re made with protein-rich mung dal batter, giving them a soft yet crispy texture. Each bite is stuffed with a colorful mix of boiled corn, beetroot, capsicum, onion, carrot, and paneer, topped with cheese and sprinkled with oregano and chili flakes for that perfect pizza flavors ✅oil free ✅ gluten-free ✅no-maida ✅no-oven --- 🧾 Ingredients For the Base (Batter): 1 cup split yellow mung dal (soaked for 3–4 hours) Salt to taste 1–2 green chilies ½ inch ginger piece 1 tbsp curd (optional, for softness) For Stuffing: ¼ cup boiled sweet corn ¼ cup finely chopped capsicum ¼ cup grated carrot 2 tbsp chopped beetroot 2 tbsp paneer cubes or grated paneer 2 tbsp finely chopped onion Salt, chili flakes & oregano as per taste Toppings: Grated cheese (mozzarella or processed) A pinch of oregano & chili flakes --- 🔪 Method 1. Prepare Batter: Blend soaked mung dal with ginger, green chili, and little water to make a smooth, thick batter. Add salt and curd, mix well. 2. Prepare Stuffing: In a bowl, mix boiled corn, beetroot, carrot, capsicum, onion, paneer, and seasoning. 3. Make Pizza Bites: Grease a non-stick mini appam pan or muffin tray. Pour a spoonful of mung dal batter to form the base. Add stuffing on top and cover lightly with a little more batter. Cook on low flame (or bake) until both sides are golden brown. 4. Add Topping: Sprinkle cheese on top, cover for a minute until it melts.
