Happy cooking and wishing you a wonderful day! 😊 💖 ℹ️ This lentils dish serves 4. 💬 Let me know in the comments if you enjoy my vegan recipes. ❤️ SUBSCRIBE to see new recipes: https://www.youtube.com/c/WeCookVegan... ℹ️ With the ingredients listed in the recipe you get about 12 delicious patties. 🥣 Ingredients: 3.5oz | 100g | 1/2 cup red split lentils 7oz | 200g | 1 cup rice 8 bell peppers 15oz | 400g | 1 can chopped tomatoes 1 onion 3 garlic cloves 🥣 Seasonings: 1/2tsp Korean chilli flakes (Gochugaru) 1/2tsp turmeric 1/2tsp ground cumin salt to taste 16oz | 500ml | 2 cups vegetable stock chopped parsley 🧑🍳Cooking tips: ❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour. ❗You can substitute Korean chilli flakes (Gochugaru) for crushed red pepper flakes or cayenne pepper. 🥣 Method: Cut the bell peppers top off Remove the stem and seeds Place on a baking dish Chop 1 onion and cook over medium heat on a lightly oiled pan for 3 minutes Mince 3 garlic cloves Add 7oz | 200g | 1 cup rice, 1/2tsp Korean chilli flakes, 1/2tsp turmeric, 1/2tsp ground cumin and salt to taste ℹ️ Feel free to add your favourite herbs to get the flavour you like Stir in 16oz | 500ml | 2 cups vegetable stock Add 15oz | 400g | 1 can chopped tomatoes and 3.5oz | 100g | 1/2 cup red split lentils ℹ️ You can use any other lentils you have available Mix and cook over medium heat for 20 minutes Add chopped parsley ℹ️ Do not worry if the rice half cooked as it will be fully cooked in the oven later Fill each pepper with the lentils and rice mixture Add 2oz | 50ml | 1/4 cup water and cover with wet parchment paper Bake in the preheated oven at 350F | 180C for 30 minutes.
