Hey, this week I baked a lemon drizzle sponge (not loaf), I made this zesty classic with a twist to achieve the softest sponge and a creamy icing rather than the classic drizzle. to make this cake you will need: cake tin that is 40 x 25 cm or 10 x 15 inch pan Lemon Sponge Cake Ingredients 170 g Cake Flour 130 g Caster Sugar 130 g Butter (room temp if possible) 4 g Baking Powder 1 g Salt 3 Medium sized Eggs 25 g Milk Zest of 2 Lemons 3 Tbsp Fresh Lemon Juice Icing 300 g Double cream 60 g Powdered/Caster sugar Vanilla essence (optional) Garnish 25-30g pistachios Lemon Zest thanks for watching x
