Here's a simple lobia curry recipe: Ingredients: • 500 Gm dried lobia (black-eyed peas), soaked overnight • 1 Cup oil • 1 teaspoon cumin seeds • 2 large onion, finely chopped • 2 tomatoes, finely chopped • 5 -6 green chili, chopped (adjust to your spice preference) • 1.5 tablespoon ginger-garlic paste (include some green chillies , 1 teaspoon ground coriander) • 1/2 teaspoon turmeric powder • 1 teaspoon ground cumin • 1 Bari ilaichi, 1 inch cinnamon stick ,2 bay leaves • 1 tb spoon chili flakes • 1 tb spoon red chili powder (adjust to your spice preference) • 1 teaspoon garam masala • Salt to taste • Fresh coriander leaves for garnish Instructions: 1. Rinse the soaked lobia beans and pressure cook them with enough water and a little salt for about 15-20 minutes, or until they are tender. Alternatively, you can simmer them in a regular pot until they are soft. Drain and set aside. 2. Heat oil in a pan or pot over medium heat. 3. Add the chopped onions and sauté until they become translucent. 4. Stir in the ginger-garlic paste and green chili. Cook for a couple of minutes until the raw aroma disappears. 5. Add the chopped tomatoes and cook until they turn soft and the oil starts to separate. 6. Add the turmeric, cumin seed , cinnamon , bay leaves, bari ilachi, red chili powder, chili flakes and salt. Cook the spice mix for a few minutes until the oil separates from it. 7. Add the cooked lobia beans to the spice mix and stir well to coat the beans with the masala. 8. Add about 1 to 1.5 cups of water, depending on your desired consistency. Simmer the curry for 10-15 minutes on low heat, allowing the flavors to meld. 9. Sprinkle garam masala and mix it in. 10. Garnish with fresh coriander leaves. Your lobia curry is ready to be served. It pairs well with rice, naan, or roti. Enjoy! Feel free to adjust the spice levels and ingredients to suit your taste.
