
Roasting a Standing Rib Roast (aka Prime Rib)
The 👑 of Holiday roasts…the rib roast! Here’s how to make sure your roast is cooked to perfection ⬇️ 1. Remove your rib roast from the refrigerator about an hour before you plan to start cooking. We prepare our rib roasts with the bones removed, then tied back on. This allows for easy carving, and a juicier roast cooking with the bones still attached. 2. Preheat your grill, smoker, or oven to 225°. Make sure you have a reliable meat thermometer for this cook! 3. Season the rib roast on all sides with olive oil and a liberal coating of salt and pepper. We used @borsari herb infused sea salt. 4. Place the roast on a wire rack and into the smoker, grill, or oven. Plan on 35-40 mins of cook time per pound at 225°. Baste the roast with melted butter every 30 minutes to help build a nice crust. 5. Once the roast hits an internal temperature between 90-100°, increase the temperature of your heating source to 400°. The remainder of the cook, approximately 30-40 minutes will be done at 400°. 6. Remove the rib roast when it hits an internal temperature of 125° for medium rare, or 130° for medium. 7. Rest the roast for 30 minutes. No need to wrap with foil. Remove the butcher twine, separate the roast from the bones, slice and serve! 8. For maximum flavor, serve with our house made Au Jus!
