Rib Roast AKA Prime Rib Smoked To Perfection!

Picked up a Choice Grade 5lbs boneless rib roast. Sprinkled with salt the night before to let that goodness set it. Next day a solid coating of Holy Cow Rub, or use your favorite rub or even good ol SPG. This smoke took 2 hours with my temp set at 250, pulling with an internal temp of 120. Gave it a quick sear on the pan to seal in the juices and give the outside a bit of a bark. Came out to a PERFECT rare/med rare in the center. Get Kraken and get shoveling!
