Pair it with a fresh green salad, roasted veggies, or a glass of crisp white wine for a truly memorable meal. 👨🍳 Ingredients You’ll Need: Red Snapper Fish - 1 1/2 kg Salt - 2 kg Egg Whites - 6-8 Red Chilli Powder - 1 tsp Cumin Powder - 1 tsp Star Anise - 1-2 tsp Peppercorns - 1-2 tsp Javitri (Mace) - 1-2 tsp Fennel Seeds - 1-2 tsp Ajwain (Carom Seeds) - 1-2 tsp Coriander Leaves - A handful Mint Leaves - A handful Dill Leaves - A handful Lemon Slices - As needed Garlic Cloves - 2-3 (bashed) Ginger - A small piece (bashed) Oil - As required for greasing Red Chilli - 3-4 (whole) Salted Butter - 1 cube Green Chilli - 1 (sliced) Herbs (Dill & Coriander) - A handful of each Lemon wedges - For serving Process: • Prepare the Fish: Take 1 1/2 kg of red snapper fish. In a vessel, add 2 kg of salt. Add 6-8 egg whites to the salt. Add 1 tsp each of red chilli powder and cumin powder for flavour. Add 1-2 tsp each of star anise, peppercorns, javitri, fennel seeds, and ajwain. Mix all the ingredients using a mixer grinder or your hands. • Stuff the Fish: Take some coriander, mint, and dill leaves and stuff them inside the fish. Add lemon slices inside the fish along with 2-3 bashed garlic cloves and a small piece of bashed ginger. • Prepare the Baking Tray: Take a tray and cover the bottom with foil paper. Drizzle some oil at the bottom of the tray and on the fish as well. Spread a thin layer of the salt mixture you just prepared on the tray. Place the fish on top of the salt layer. Drizzle a little oil on top of the fish. Add 3-4 red chillies inside the fish and some more lemon and garlic. Cover the fish with another layer of the blended salt mixture. • Bake the Fish: Preheat the oven to 200-210°C. Bake the fish in the oven for about 45 minutes. Prepare the Garlic Butter Sauce: In a small vessel, melt 1 cube of salted butter. Add 1 sliced green chilli and some dill and coriander leaves. Toss in some lemon wedges and mix well. • Serving: Once the fish is baked, crack the salt layer carefully. Serve the fish in pieces, with a side of garlic butter sauce and extra lemon wedges. ✨ Pro Tips: Choose a fresh, firm fish for the best results.
