Healthy Grilled Chicken Salad for Weight Loss | No Mayo Healthy Dressing | Chicken Breast Recipe | High Protein Chicken Salad for Weight Loss | Grilled chicken Salad This Quick No Mayo Salad recipe features juicy Grilled Chicken Breast steam cooked to perfection with very less oil. Paired with a simple salad and a homemade Yogurt dressing, it's the perfect healthy lunch to initiate weight loss while keeping you satiated due to High Protein and Fiber. INGREDIENTS FOR CHICKEN 2 small Chicken breast 210g 2 Tablespoon Thick Curd/Yogurt 1/2 Teaspoon Garlic powder 1/2 Teaspoon Ginger powder 1/2 Teaspoon Onion powder 1 Teaspoon Sweet Paprika/Kashmiri Chili powder 1/2 Teaspoon Salt 1/2 Teaspoon Black Pepper, freshly grounded 2 Teaspoon Lemon juice 2 Teaspoon Olive oil, to pan fry 1.5 Tablespoon Water, to steam cook FOR DRESSING 3 Tablespoon plain Greek Yogurt Salt to Taste Pinch of Black pepper 1/2 Tablespoon Olive Oil 2 Teaspoon Lemon Juice 1/4 Teaspoon Honey, Optional 1 Teaspoon White/Balsamic Vinegar, Optional FOR SALAD 1/4 Cup diced Cucumber 1/4 Cup diced Carrot 1/4 Cup Cubed Onion 1/4 Cup shredded Iceberg Lettuce 1/3 Cup Diced Apple Grilled chicken breast cubes METHOD 1. Slice through the Chicken Breast Fillets from the thick part into two even slices. Slicing helps in cooking evenly and faster. 2. Make the Marinade by mixing yogurt with Ginger, Garlic, Onion and Paprika powder. Add Lemon juice, freshly grounded black pepper and Salt to taste. Mix well. Add the Chicken fillets and rub well. Let it rest for 15 minutes or keep overnight refrigerated. 3. Pan Fry the Fillets first for 5 mins or till Golden brown. Flip and add a splash of water, cover cook on Medium low heat for another 6 mins. if using larger chicken breasts, may take few more minutes. Flip and cook few seconds to let any liquid dry up. Transfer to a chopping board. Keep them covered for 5mins before chopping. 4. Make a healthy Dressing by mixing Greek yogurt, Lemon juice, salt and pepper, Bit of honey and Vinegar. 5. Mix Diced Cucumber, Carrot, Onion, Lettuce and Apple in a bowl. Add the grilled chicken cubes. Drizzle with the dressing just before serving. Have this salad for lunch or dinner for Weight loss or have it before you have your meal.
