Light! Delicious! ⏩ Homemade and fresh! VEGGIE FRITTATA This healthy baked frittata is loaded with vegetables and topped with cheese making it incredibly delicious. INGREDIENTS: 2 tablespoons olive oil 3 shallots, finely chopped 350 g mushrooms, sliced 275 g spinach leaves, trimmed Salt and pepper 50g sliced almonds, roasted 5 eggs 2 tbsp freshly chopped parsley 2 tbsp cold water 75 g grated parmesan INSTRUCTIONS: Heat the olive oil. Sauté the shallots on a low heat, stirring occasionally, for 5 minutes until translucent. Add the mushrooms and sauté for 4 minutes, stirring frequently. Switch to medium heat, add the spinach and cook for 3-4 minutes, stirring frequently. Reduce the heat, season with salt and pepper and add the almonds. and mix in the almonds. Whisk the eggs, parsley and water together with the salt and pepper in a bowl. Pour the mixture into the pan and fry for 5-8 minutes until the underside is set. Lift the sides occasionally to let the runny egg run underneath. Meanwhile, preheat the oven grill. Sprinkle with cheese and bake on the top shelf under the grill for 3 minutes until the cheese has melted. Potatoes in the oven. THIS IS IT!
